Rocky Road Chocolate Muffins

Finally posting a recipe! I made these muffins, and they went down a treat with everyone in my family. Not hard to make but really tasty. I didn't run into any difficulties in this recipe, other then forgetting an ingredient which I managed to put in at the end before it was too late!

This recipe makes 12 medium sized muffins


Ingredients


8oz Plain Flour
2 oz Cocoa Powder
1 tbsp baking powder
Pinch of salt
4oz caster sugar
3 1/2 oz white chocolate chips (you can use milk chocolate if you wish)
1 3/4 oz white mini marshmallows, chopped into halves
2 eggs
250ml/9 fl oz milk
3oz unsalted butter, melted and cooled


Method


Preheat your oven to 200 degrees C/400 degrees F/Gas mark 6.
Put 12 paper muffin cases in a muffin tin


Sift together the flour, cocoa powder, baking powder and salt into a large bowl.
Stir in the sugar, chocolate chips and marshmallows.


Lightly beat the eggs in a large bowl/jug, then beat in your milk and butter (melted and cooled is very important).
Make a well in the centre of the dry ingredients and pour in the liquid ingredients. Stir gently until just combined. Do not over mix.


Spoon your mixture into your prepared muffin tin.
Bake in the preheated oven for about 20 minutes, until risen and firm to the touch.


Leave the muffins in your tin for 5 minutes, then turn out onto a wire rack to cool or serve warm.


Tip


These muffins are delicious warm, chopped in half with vanilla ice-cream in between.

Introduction

Hi everyone,
So this is my first entry in my new blog, which is all about baking. I am by no means a professional, and don't even consider myself to be that good at baking but it's something I really enjoy and I decided to make this blog as a way of sharing my recipes, ones I've used a lot before and new ones I've just tried out. I hope you enjoy reading and maybe even try out some of the recipes I'll be posting.
